The juniper plant is a coniferous plant which is part of the genus Juniperus of the cypress family. There are approximately 50-67 different species of juniper, which are distributed widely throughout the northern hemisphere. Juniper berries were used in ancient Greece as a diuretic. In Europe, the scent of juniper berries was used to help ward off the plaque. Nicholas Culpeper, a seventeenth-century herbalist, recommended the use of juniper as an appetite stimulant. Native Americans used juniper berries as a survival food during the cold winter months. The berries were dried and ground and then made into cakes. Some tribes even roasted the berries, ground them, and then used them as a coffee substitute. The tea was recommended to be used by Jethro Kloss for kidney, prostate, and bladder disorders, and for dropsy and digestive diseases. The berries and oil of the juniper plant were listed in the U.S. Pharmacopoeia from 1820 to 1873. They were also listed in the National Formulary until 1960.
Juniper berries contain a volatile oil that has traditionally been used to treat conditions of the urinary tract. The berries of the juniper plant are often used to increase the flow of urine. They are also beneficial for ridding the body of uric acid, which may crystallize in the kidneys. They are also used to dissolve kidney stones and sediment in the prostate. Juniper berries are also recommended for treating digestive problems, indigestion, gas, and to cleanse the blood. The berries may even help to stimulate the appetite. Saltpetre.What is and where would I be able to buy Saltpetre in England.?
It is for an old recipe to salt beef that I would like to try.
Brine.4 pnts water,1 1/2 lb coarse salt,1 lb darkbrown sugar,
2 oz SALTPETRE,
1 Bay leaf,sprig of thyme,10 juniper berries crushed and 10 crushed pepper corns.
Boil hard for 5 mins then cool,strain then immerse a 4-6 lb piece of silverside or brisket for 7-10 days.Cook the same as a Bacon joint.
Saltpetre is Potassium nitrate. I bought some from the local chemist’s pharmacy counter.
Saltpetre is carcinogenic, so be careful how you use it. It is a constituent of most “pink” coloured preserved meats, and providing you do not eat too much of it too often you will be fine.
Your recipe sounds fine, just make sure to check your beef on a daily basis, and if the “brine” goes slimy, or you detect any “off” smells discard the lot. Good Luck and enjoy the beef
